Garbanzo Beans and Raisins

Garbanzo Beans and Raisins is a Moroccan food recipe with carrots and served over rice.
Ingredients
  • 1 onion, sliced
  • 1 carrot, chopped
  • 1 clove garlic
  • 2 tbsp peanut oil
  • 1 cup butternut squash, diced
  • 1 cup chicken broth
  • ½ cup raisins
  • 1 tsp turmeric
  • 1 tsp cinnamon
  • ½ tsp ginger
  • 1 can garbanzo beans
  • 2 cup cooked rice
Instructions
  1. Saute onions and garlic in saucepan, stirring frequently until tender, about 7 minutes. Add remaining ingredients except garbanzo beans and rice. Heat to boiling, reduce heat, cover and cook until squash is tender, about 8 minutes.
  2. Stir in garbanzo beans. Serve over rice.
