Garbanzo Beans and Raisins

Garbanzo Beans and Raisins is a Moroccan food recipe with carrots and served over rice.
Ingredients
- 1 onion, sliced
- 1 carrot, chopped
- 1 clove garlic
- 2 tbsp peanut oil
- 1 cup butternut squash, diced
- 1 cup chicken broth
- ½ cup raisins
- 1 tsp turmeric
- 1 tsp cinnamon
- ½ tsp ginger
- 1 can garbanzo beans
- 2 cup cooked rice
Instructions
- Saute onions and garlic in saucepan, stirring frequently until tender, about 7 minutes. Add remaining ingredients except garbanzo beans and rice. Heat to boiling, reduce heat, cover and cook until squash is tender, about 8 minutes.
- Stir in garbanzo beans. Serve over rice.
