Spiced Chicken with Olives

This Moroccan food recipe bakes chicken with spices and olives.
Ingredients
  • ¼ cup cilantro
  • 1 tbsp paprika
  • 2 tsp cumin
  • ½ tsp salt
  • ½ tsp turmeric
  • ½ tsp ginger
  • 2 cloves garlic
  • 3½ lbs chicken
  • ⅓ cup flour
  • ½ cup water
  • ¼ cup lemon juice
  • 1 tsp chicken bouillon
  • ½ cup kalamata olives
  • 1 lemon, sliced
Instructions
  1. Mix cilantro, paprika, cumin, salt, turmeric, ginger and garlic. Rub mixture on all sides of chicken then coat with flour. Place chicken in ungreased baking dish.
  2. Mix water, lemon juice and bouillon. Pour over chicken and add olives and lemon slices.
  3. Cook uncovered at 350 degrees spooning juices over chicken occasionally, until thickest pieces of chicken are done, about 1 hour.
  4. Serve with couscous or rice.
