Merguez

Merguez is a Moroccan food recipe for grilled lamb sausages.
Ingredients
- 1⅓ lbs lean lamb, ground
- ⅔ lbs lamb, pork or beef fat
- 2 tbsp water
- 1½ tbsp garlic, minced
- 2 tbsp fresh cilantro, chopped
- 2 tbsp fresh parsley, chopped
- 2 tbsp paprika
- 1½ tsp cumin, ground
- 1½ tsp coriander, ground
- 1¼ tsp cinnamon
- ¾ tsp cayenne pepper
- 1¼ tsp salt
- ½ tsp pepper
- 2 feet of hog casing
- 2 tbsp olive oil, optional
- 1 green pepper, optional
- 2 onions, optional
Instructions
- Combine all ingredients except the olive oil and the three optional items in a large bowl and mix well. Stuff the casings with the mixture and twist and tie to make eight 4-inch links. Or make patties.
- Preheat grill or broiler.
- Prick casings with a fork 2 to 3 times and brush with oil. Grill or broil 3 to 4 minutes on each side until cooked through.
- For patties, brush with oil and grill 4 to 5 minutes on each side or saute over high heat.
- Use optional veggies to add to skewers with sausage.
