Merguez

Merguez is a Moroccan food recipe for grilled lamb sausages.
Ingredients
  • 1⅓ lbs lean lamb, ground
  • ⅔ lbs lamb, pork or beef fat
  • 2 tbsp water
  • 1½ tbsp garlic, minced
  • 2 tbsp fresh cilantro, chopped
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp paprika
  • 1½ tsp cumin, ground
  • 1½ tsp coriander, ground
  • 1¼ tsp cinnamon
  • ¾ tsp cayenne pepper
  • 1¼ tsp salt
  • ½ tsp pepper
  • 2 feet of hog casing
  • 2 tbsp olive oil, optional
  • 1 green pepper, optional
  • 2 onions, optional
Instructions
  1. Combine all ingredients except the olive oil and the three optional items in a large bowl and mix well. Stuff the casings with the mixture and twist and tie to make eight 4-inch links. Or make patties.
  2. Preheat grill or broiler.
  3. Prick casings with a fork 2 to 3 times and brush with oil. Grill or broil 3 to 4 minutes on each side until cooked through.
  4. For patties, brush with oil and grill 4 to 5 minutes on each side or saute over high heat.
  5. Use optional veggies to add to skewers with sausage.
