Chicken with Olives and Dates

This Moroccan food recipe bakes chicken with olives and dates sprinkled over top.
Ingredients
- 3 cloves garlic, chopped
- 2 tbsp oil
- 2 tsp cumin
- 2 tsp ginger, ground
- 1 tsp salt
- 1 tsp turmeric
- 1 tsp paprika
- 1 tsp cinnamon
- 1 tsp pepper, ground
- 8 chicken legs
- 2 tsp lemon rind, grated
- ½ cup olives
- 1 cup dates, chopped
Instructions
- Mix garlic, oil, cumin, ginger, salt, turmeric, paprika, cinnamon and pepper in a bowl. Brush each chicken leg with this mixture to coat chicken surfaces well.
- Place chicken side by side in a large, flat oven-proof dish. Cover & leave in a cool place for 1 hour.
- Bake at 350F for 35 minutes covered. Sprinkle over lemon rind, olives & dates, cover and bake 10 minutes.
