Kefta and Salad

Kefta is a Moroccan food recipe of beef kebabs served with salad.
  • 1½ lb ground beef
  • ½ cup onion, grated
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh coriander, chopped
  • 3 tsp fresh mint, chopped
  • 2 tsp fresh marjoram, chopped
  • ½ tsp cumin
  • ½ tsp paprika
  • ¼ tsp cayenne
  • 1 head of lettuce, chopped
  • 1 cucumber, peeled and chopped
  • 1 tomato, seeded and finely chopped
  • 1 green pepper, seeded and finely chopped
  • 1 hot pepper, seeded and finely chopped
  • 2 cloves garlic, minced
  • 3 tbsp fresh mint, chopped
  • 2 tbsp red wine vinegar
  • 2 tbsp olive oil
  • sprinkle of dried mint
  • sprinkle of marjoram
  1. Soak 12 wooden skewers in water for one hour.
  2. In a large bowl combine the beef, onion, garlic, parsley, coriander, mint, marjoram, salt, pepper, cumin, paprika and cayenne. Cover and let sit for one hour.
  3. In a separate bowl, combine cucumber, tomato, bell pepper, hot pepper, garlic, mint, red wine vinegar, olive oil, salt and pepper tossing to combine. Cover and let marinate at room temperature until ready to serve.
  4. Preheat grill or broiler.
  5. Wet hands with water and shape meat mixture into 2 sausage-shapes on a soaked wooden skewer. Repeat procedure for remaining meat and skewers.
  6. Grill the keftas on both sides until cooked through, about 3 to 4 minutes per side. Serve hot with chopped salad.
